PhD Opportunity - Assessing dietary triggers of coeliac disease in children

Applications close: 31 October 2026

We are seeking a highly motivated PhD candidate with a background in dietetics to join an exciting multidisciplinary research project investigating the dietary triggers of coeliac disease in children at Adelaide University. This project is a collaboration with the ENDIA Study team and leading international experts in paediatric nutrition and gastroenterology. This project will leverage data from the Environmental Determinants of Islet Autoimmunity (ENDIA) Study, Australia's largest prospective birth cohort investigating the environmental causes of type 1 diabetes and coeliac disease. ENDIA follows children genetically at risk of type 1 diabetes from pregnancy through early childhood, collecting detailed information on diet, infant feeding practices, infections, microbiome development, genetics, growth, and environmental exposures. Using this unique dataset, the successful candidate will investigate how dietary exposures during pregnancy, infancy, and early childhood influence the risk of developing coeliac disease, with a particular focus on gluten exposure and dietary patterns across early life.
